It can make your head spin trying to find instructions on how to clean mushrooms online. Some people will have you believe that if they even briefly submerge themselves in running water, they will instantly turn into squishy, inedible sponges. But there can be a surprising amount of dirt in a mushroom container. So, what do you do now?

The Basics

  • White button, cremini (or baby bella), shiitake, and portobello mushrooms caps are just some of the many types of cooking mushrooms that are appropriate for the methods outlined here.
  • Morel mushrooms (their crevices require additional steps and I have no experience with them), rare specialty types, and wild/foraged mushrooms are not covered.
  • First and foremost, always clean mushrooms right before using them in a dish. If they get wet, they'll become soft and slimy while hanging.

How Concerned Should I Be About The Cleanliness Of My Mushrooms?

I bought a container of mushrooms that contained a lot of dirt, so I did some research to figure out what kind of dirt it was, how dangerous it might be, and how thoroughly I needed to clean the mushrooms. It turned out that there was nothing to be concerned about.

Rinse whole mushrooms under running water in a colander or salad spinner to get rid of any grit. If you have a salad spinner, use it to dry them off, otherwise, pat them dry with a paper towel.

Systematic Technique Number Two for Cleaning

To clean mushrooms, you don't need to wash them in running water; just give them a quick wipe with a damp paper towel or clean dish cloth.

Techniques for Preparing Clean Portobello Mushrooms

Method 2 is my go-to because portobello mushroom cups are bigger and can hold more liquid.

  1. First, use a damp paper towel to clean the cap's exterior.

  1. If you plan on stuffing them, it's a good idea to use kitchen shears to clean up any rough edges.
  2. Take hold of the stem near its base, and twist it back and forth several times to break it loose and pull it out.

  2. When scooping the gills out of a portobello mushroom, pressing your finger against the cap's outer edge from behind can help keep the cap intact.

Frequently Asked Questions About Mushrooms

Should the stems of mushrooms be removed prior to cooking?

You can leave the stems on button and cremini (baby bella) mushrooms, though you may want to trim them a bit shorter if the ends are particularly hard and tough. The stems on portobello and shiitake mushrooms are inedible because they are so tough.

Can you consume the stems of portobello mushrooms?

To eat them? Why, yes, of course you can! However, they are often scooped out because they are in the way of stuffing the caps and have an unpleasant taste.

Do sliced mushrooms require washing before using?

Sliced mushrooms in a container are less likely to be contaminated than whole mushrooms. Still, before I put them in the oven, I like to give them a quick wash or rinse and a good patting dry. Don't wash store-bought sliced mushrooms before putting them back in the refrigerator; in my experience, they spoil more quickly than whole mushrooms. Put them to immediate use.

Does one really need a mushroom brush?

A mushroom brush is a specialized kitchen tool designed to gently remove dirt from the surface of a mushroom. Although I can see the appeal, I haven't felt the need to invest in one myself because my salad spinner and a damp paper towel get the job done just as well.

  • Rinse mushrooms under running water to get rid of any dirt or debris, then set them in a colander or the salad spinner's insert. After washing the mushrooms, pat them dry (or spin them in a salad spinner) to remove any excess dirt. Use whatever method of slicing or chopping is appropriate for your recipe.
  • Wipe the entire mushroom surface with a damp paper towel or clean dish cloth to remove any dust or debris that is easily observable. Prepare the necessary amount of slicing or chopping for your dish.
  • You can remove obvious dirt from the caps by wiping them with a damp paper towel or clean dish cloth.
  • To remove the top, turn it upside down and grasp the stem's base. To remove it, loosen it by twisting it back and forth. Trimming the caps with kitchen shears can help if their edges are particularly ragged.
  • In order to prepare whole portobello mushrooms for slicing or stuffing, the gills must be scooped out from the center of the mushroom. When scraping the outer gills, be careful not to cause the cap to break by putting your finger in front of the edges. No gill removal is required when preparing a portobello burger.
  • These instructions work for a wide range of commercially available mushrooms, including but not limited to button, cremini/baby bella, shiitake, and portobello mushrooms. Other mushrooms, such as morels and wild mushrooms, may require additional steps that aren't discussed here.
  • Be sure to clean the mushrooms right before you cook them, regardless of the method you use. Otherwise, they will absorb too much water and become soggy.
  • Dry the mushrooms thoroughly before using in the recipe, especially if you intend to saute them.
  • If you are not stuffing your button or cremini mushrooms, you can leave the stems on. However, if the stems are particularly tough, you may want to trim off the bottoms. The stems of shiitake and portobello mushrooms are inedible because they are too tough.
  • Cleaning pre-sliced mushrooms may only require a quick paper towel wipe if they are relatively clean to begin with.
