Indulge in Manitoba Wildlife Federation's Skin-On Walleye Carbonara for a Delectable Treat
Cooking fish with its skin on is an excellent method to achieve a flavorful and crispy meal that won't fall apart. Pairing any type of fish with pasta is one of my top choices, and a delectable carbonara is a simple and delicious dish that you can easily make at home. Furthermore, it includes bacon!

4 scaled walleye fillets, 3 egg yolks, 2 whole eggs, 1 cup fresh grated parmesan cheese, 4 servings of your preferred pasta noodle (any noodle will work, but I suggest long ones like spaghetti or fettuccine), cubed bacon, salt, pepper

Begin by boiling a pot of lightly salted water. For the first step, heat a pan and cook your bacon until it reaches your preferred level of crispiness. Don't forget to add a pinch of pepper. As the bacon cooks, crack your eggs into a bowl and add the grated parmesan cheese. Mix these ingredients thoroughly. There's no need to add salt to this sauce because the cheese is already quite salty. Remove the bacon from the pan.

Season and score the skin of the walleye fillets. Place them skin-side-down into the bacon fat over medium-high heat, and hold down the fillet with a spatula or tongs to prevent it from curling during searing. Flip the fish after it cooks halfway through and finish cooking the other side. As the fish cooks, toss your noodles into the boiling water.

Quickly whisk a quarter to a half cup of noodle water into the egg and parmesan mixture to warm up the egg and cheese, thickening the sauce. Once the noodles are soft enough to eat, add them to the sauce along with the bacon. Use tongs to mix everything thoroughly. Place a mound of noodles on a plate, gently laying the walleye fillet with the crispy skin facing up on top of it to make it look more appealing. Drizzle a little extra virgin olive oil over the dish, and you're ready to relish the rich, savory, and incredibly delightful wild walleye dish!
