Grilled Baked Potatoes

Because they are baked on the grill, these potatoes make a great side dish for any barbecue. They have a salty crust, fluffy interior, and crisp exterior; they're also vegan and Whole30-friendly. Serve with grilled protein and pile on the toppings.

Grilled baked potatoes are just as easy as they are delicious, and they taste like they came straight from a steakhouse. And, um, I forgot to mention that they're salted?

Recipe for Making Them

To begin, choose your potatoes. To ensure uniform cooking, select Russet potatoes of similar size.

For 15 minutes with the lid closed, preheat the grill to a temperature of at least 350 degrees Fahrenheit.

Next, get the potatoes ready. Scrub the potatoes and stab them all over with a fork. Apply avocado oil or another neutral oil after drying. Coat the potatoes by turning them over in batches as you pour about 3 tablespoons of oil into a large, shallow bowl. Take out and drain any excess oil before moving on.

In a third, larger bowl, sprinkle some Kosher or sea salt. Place the oil-coated potatoes in the salt bowl and toss to coat.

Make sure there are no openings by wrapping each potato in two layers of foil. Put on grill with lid closed. Bake for 30 to 40 minutes, or until a skewer inserted into the thickest part of the potato meets no resistance.

Take off the grill and discard the foil. Purify and reuse

First, cut a slit down the top of the potato with a knife. Then, with a towel or potholder over your hands to protect them from heat, press the ends of the potato in towards the center to open it. If you want to fluff the meat, use a fork to scrape it. Put on a lot of toppings and serve

Get That Grill Ready!

The grill must be properly preheated before beginning this or any other grilling recipe. Before adding the potatoes to the grill, make sure it reaches a temperature of at least 350 degrees Fahrenheit (176 degrees Celsius). For best results, preheat your grill for 15 minutes with the lid closed.

Chef’s Tips

  • Get the grill nice and hot before you start cooking. For further explanation, see the preceding section.
  • It's not required, but a salty coating on the potato results in a deliciously crunchy exterior. Highly suggested!
  • To avoid explosive potatoes while microwaving, prick them all over with a fork first.
  • Expect a longer cooking time, around 40 minutes, if you need to open the lid to cook other items on the grill. If at all possible, cook with the lid closed. This makes the grill suitable for cooking the potatoes like an oven.
  • Make sure there are no holes or flare-ups by wrapping your potato in two layers of foil.
  • Buy potatoes of uniform size for more consistent results in the oven.
  • Cook the potato in the microwave for four to five minutes, or until it yields easily to gentle pressure. This can be started hours in advance and finished on the grill.
  • To easily crust the outside of your potatoes, roll them in salt in a wide, shallow bowl.

  • Put in microwave after you've oiled and salted all the potatoes. Cook the potatoes in the microwave for 4 minutes on high. Take the potatoes out of the microwave and individually wrap them in two layers of aluminum foil.
  • Put the potatoes, still in their foil, on the grill rack. Keep the lid closed while you grill the potatoes for 30–40 minutes. Keep in mind that grilling time increases every time the lid is opened.
  • After 30 minutes, start checking the doneness of the potatoes by piercing the skin with a fork or skewer. Remove potatoes from grill when a fork or skewer can be inserted into one with little to no resistance.
  • Remove foil from grilled potatoes and set aside. Slice the potato lengthwise down the middle, and then press the two cut ends together to open it up. Use a fork to fluff the potato flesh, then top as desired.
  • The grill must be fully heated before the potatoes are added.
  • Keep spuds in an airtight container in the fridge for up to 5 days.
